Sweet Cottage Cheese Buns
As the sunny weekend has come to an end, we decided to celebrate with a sweet treat that makes the Sunday breakfast a tiny bit more exciting and the house smell like baked goods.
This sweet cottage cheese bun recipe reminds me of my childhood – these treats were a true joy when visiting the local market or bakery. Enjoy them warm or chilled, they always taste like a dream.
List of ingredients for 16 buns
- 1 glass of milk
- 100g unsalted butter
- 500g flour
- 2 tbsp sugar
- pinch of salt
- 1 packet of dry yeast
- 500g cottage cheese
- 2 tbsp sour cream
- 4 egg yolks (extra egg for glazing)
- 1 tsp of vanilla extract
- 4 tbsp sugar
- 1 tbsp flour
- 2 tbsp of raisins (optional)
Melt the butter in a pot together with milk and keep aside till lukewarm. In a bowl mix the flour with salt, sugar and dry yeast. Then slowly add the milk/butter mixture and knead the dough till you get a nice round ball. Cover the bowl with towel and leave in a warm place for about an hour for the dough to rise. You can put the bowl in the oven which is set on the lowest temperature possible.
Now you can start preparing the filling.
In a bowl mix the cottage cheese with sour cream, egg yolks, vanilla extract. You can use a hand mixer to get an even consistency. Then fold in sugar, flour and raisins (if preferred). Before adding the raising keep them in warm water for 15 minutes.
When the dough has risen, separate it in 16 sections and roll into balls. Place the dough balls on a baking sheet that is covered with baking paper, cover with cling film and leave to rise for 30 more minutes.
Set your oven to 200ºC. Now take a clean glass and make a pit with the glass bottom in the centre of every ball. Whisk 1 egg and use it to glaze the sides on buns. Fill the pits created with the glass bottom with your cottage cheese filling. Place in the preheated oven for 20-30 minutes until the buns are golden brown.
