Oven-baked Salmon – 40 minute recipe
Salmon is the favoured fish in our house-hold and after experimenting with different recipes to prepare the fish, it is clear which meal is our favourite.
This is the perfect recipe for someone who fancies a special dinner that doesn’t break the budget (if you already have all the spices, this meal can cost under 50kr*) and takes almost no time and effort to make. Inspired by Taste of Home.
Ingredients for the salmon (2 person meal):
- 2 salmon fillets = 19kr at Rema1000
- lemon-pepper = 10kr at Tiger
- garlic powder = 20kr
- 1 lemon = 4kr
- 1 onion = 8kr per bag
- butter = 10kr
Preparation
Pre-heat your oven (top/bottom) to 180-200°C (I prefer 200°C for my oven).
Line your oven pan with tin foil and grease with butter or oil. Lay the salmon fillets skin-down on the foil and grease top of the fillets with some butter (silicone brushes work wonderful for this). Sprinkle generously with lemon-pepper and garlic powder. Now slice the onion and lemon and cover the fillets as pictured below. Dot with butter and fold the foil around salmon tightly. Put in oven for 20 minutes.
While the salmon is baking you could prepare a side dish of your choice – I find that french fries or regular oven-baked potatoes work best with this recipe.
Dill sauce ingredients:
- Sour cream = 8kr
- Mayonnaise = 15kr
- Prepared horseradish = 8kr per pack
- Onion salt = 20kr
- Pepper = 10kr
- Dill weed = 10kr at Tiger
- Lemon juice
Preparation
For the dill sauce all you have to do is mix all the ingredients together. The measurements depend on how much sauce you want to make. For 2 persons I like to mix: 3 full tablespoons of sour cream (1 cup), 1 tablespoon of mayonnaise, 3-4 full teaspoons of horseradish, onion salt, pepper and dill to taste and 1 teaspoon of lemon juice. Mix well and store in the fridge ’till serving.
When 20 minutes have passed, carefully open the tinfoil to uncover the salmon and leave in the same temperature for 10 more minutes. After 10 minutes, turn the oven setting to grill and keep in for another 10 minutes. The fish is done when it flakes easily with a fork. When done – serve with the dill sauce and a side dish. Squeeze the juice out of the lemon that is covering the fish for additional juiciness.
